Hand harvesting of ripe and whole, intact grapes, de-stemming, crushing and fermentation by indigenous yeast. Pressing and end of primary (alcoholic) fermentation in tank. Spontaneous secondary (malolactic) fermentation and subsequent decanting to remove lees. Bottling in the spring following the harvest.
