Chinon ‘Mathilde’ 2022

Harvested from different parcels on the domaine, all of which have been farmed organically since 2000 and biodynamically since 2004. Grapes are harvested by hand before being pressed in a pneumatic press: fermentation and five months of ageing in stainless steel before bottling.
