Harvested from two of Jérome’s oldest and highest quality plots, planted on loamy soils, one in 1964 and the other in 1935. Grapes are pressed in a traditional Coquard press over a 24 hour period. 30% in neutral oak barrels and the rest in stainless steel. Aged for 30 months on lees. No dosage & no added SO2.
